
Healthy Hotspot Recipe: Celebrity Ceviche

The "Gossip Girl" bad boy was very recently spotted at the Los Feliz restaurant in NYC, where celebrity chef Julieta Ballesteros creates signature dishes served to their star clients on the daily. You may recognize her name from "Iron Chief America" (against Cat Cora) and "Kitchen Nightmares." (p.s. for those in the know, Los Feliz is one of 5 venues under managing partner and restaurant superstar Rob Shamlian; Fat Baby, Spitzer's Corner, and Mason Dixon have all also been wildly successful.)
Opening her kitchen for yours truly, I requested an easy, healthy meal to make at home. Julieta delivered with a delicious celebrity ceviche, just like the dish she serves!
Julieta’s Robalo ceviche | Serves 4
- 1 1/2 cups fresh sea bass fillet, no bones, cut into 1/2” cubes
- 1/2 cup freshly squeezed lime juice
- 1/2 cup freshly squeezed orange juice
- 2 chopped plum tomatoes
- 1/2 of red onion, chopped
- 1/4 of a bunch of cilantro, chopped
- Salt and white pepper to taste
- Combine all ingredients in a bowl, toss, let it chill for 5 min. (if you don’t have access to the freshest fish, it’s best to let marinate for 2 hours)
- Serve with a chili rim in a martini glass and garnish with fresh avocado.
Treat your dinner guests like the superstars they are, or if you’re like me, keep all the goodness to yourself! Leftovers make a great lunch, because let’s be real in that most of us won’t be going to a celebrity hotspot for our next meal. DIY and brown-bagging it IS fabulous, you know!
